This season, Salterra hosts Chef Adrianne for a multi-day culinary experience rooted in simplicity, technique, and bold coastal expression. Known for her ability to balance refined cooking with vibrant, approachable flavors, her work is guided by a respect for ingredients and a natural sense of place. At Salterra, that philosophy evolves. Here, the island becomes the framework. Just-caught seafood. Open fire. Indigenous ingredients. Salt air, citrus, smoke, and depth. Dishes that feel effortless, yet precise—shaped as much by the environment as by the chef herself. This is not a static menu, but a living experience—designed to unfold over the course of the weekend.

Friday, June 5th | Opening Night — Meet the Chef

The weekend begins with a relaxed welcome gathering introducing Chef Adrianne and the culinary team. A vibrant raw bar, seasonal cocktails, and an open-air setting create an easy first moment to connect. Guests are invited to meet the team, understand the direction of the menu, and settle into the experience as a guest DJ carries the evening forward.

Saturday, June 6th | Dinner at Brine

Our fine dining outlet will feature culinary progression that reflects the spirit of South Caicos—beginning with a welcome of champagne alongside local conch fritters and charred pineapple tartar sauce. From there, a sequence of dishes unfolds: snapper ceviche in leche de tigre served in coconut, buffalo mozzarella with caprese relish and grilled focaccia, and ginger and miso braised wagyu short rib with pickled onion, fresno chili, whipped corn, and baby bok choy. The experience concludes on a lighter note with passion fruit and condensed milk panna cotta finished with candied sesame crunch.

Sunday, June 7th | Island Cook-Out

A boat departure leads to a secluded cay where the experience opens into a refined island cook-out. A family-style menu is built around open fire and a live conch grill—fresh seafood, vibrant flavors, and an atmosphere that moves between laid-back and celebratory. A DJ carries the energy throughout the day, creating a lively rhythm from arrival through late afternoon.

Back at the resort, the evening settles into a more intimate close with a fire along the beach, s’mores, and fondue under the stars.
